Lunch recipe: Air-fried baby potatoes

Ingredients: 4 baby potatoes Air-fryer oil Vegan mayonnaise Tools: Air-fryer Fork Vegetable scrubber Tongs Time taken: 19 mins at 200℃ plus scrubbing, drying, oiling and stabbing time Method: grab your fresh baby potatoes grab your vegetable scrubber use the scrubber and cold water to scrub the soil off your potatoes wash away the scrubbed off bits dry your potato spray a squirt of oil onto the potatoes and rub it around it... just needs to be a thin layer, so you can always add more but you can't take it off! stab your oiled potatoes with the fork all over it to let the steam out set your air-fryer to 200℃ and the timer to 19 minutes start the pre-heating off when the pre-heating is sorted, plop your potatoes into the basket wash your hands and relax until you're prompted to turn the food after about 12-ish minutes use the tongs to turn your potatoes over  pop the drawer back into your air fryer get your plate, knife, fork and drink ready when your air fryer finishes cooking, ...

I'm not, and never have been, probably never will be, a good cook but my simple meals are usually edible - just about 😉 This is for my benefit mostly, to keep track of what works, what doesn't and how I can improve each recipe. It's been inspired by a totally new-to-me lunch which has prompted me to start this new blog. I'm a chocaholic vegetarian who is allergic to dairy and peppermint and I love my fruit and veg - especially if they are fresh as opposed to frozen.  I'm a fairly new OddBox subscriber and the vast majority of the fresh fruit and veg I use on this blog will have come from them.  There's nothing wrong with frozen veg and it's definitely got a place in my stomach, I just prefer fresh whenever possible is all.
